Our food takes time.

Most of our meats begin their journey to you by resting in a brine solution for up to 12 hours. We then rub the meats with a variety of spices to compliment the different cuts.

Some of the ingredients that these dry rubs consist of are: black pepper, paprika, cumin, mustard & mustard seeds, onion, garlic, cayenne, chilli, coriander seed, oregano, cinnamon, clove, fennel, all spice, tumeric, myrtle, pimento, coffee, nutmeg, celery salt, sea salt, and sugar.

We have used a combination of traditional American BBQ flavors and Australian natives spices to compliment the smoked meats. The meats are then cooked in a Low n Slow hot smoking method, ranging from 18 to 26 hours, using a combination of beech, hickory, and coal.

We are also very proud of our sauces which are all made in-house on King street, these are also available for purchase! ask our staff about how you can take some Old Faithful home with you.
